plugins: use new config-aware mkMappingOption

Generated using:

Tweaked manually (placement in inherit list, fixing todo-comments and toggleterm).

Ran `nix run nixpkgs#deadnix -- -e` to clean up.
Next commit includes unrelated dead code.
